We monitor every port on out network as well. We currently have Force10 switches, but I monitored our Cisco devices before we retired them and I used HP at my last position and it works fine for that as well.
For a test I would set up a single switch manually, once the switch is found it will give you the option to select what you want to monitor on the device. Select all interfaces and you are there. Make sure you have the same SNMP credentials and/or community on every switch first, that will let you use a single authentication set for all of the switches. SNMP is how it pulls the information that you are looking for. If you go the route of device tracking it uses the same credentials.
